Whole milk spray-dried to a powder, shelf-stable for months without refrigeration and reconstituted with water before use. Because it is around 97 per cent solids, a per-100 g nutrient figure describes roughly eight glasses of reconstituted milk rather than a serving.

Supplies the calcium, phosphorus, protein and added vitamin D of the milk it was made from, in concentrated form. The bone evidence is observational, concerns dairy intake generally, and is strongest during growth rather than in older adults.

Limited evidence. Early human work, or mostly lab and animal research.

Contains the full casein and whey protein complement of milk in concentrated form, and milk has been repeatedly tested as a post-exercise protein source with favourable results. Those trials used liquid milk; powder reconstituted to the same protein dose would be expected to behave similarly, which is an inference rather than a finding.

    A major regulated allergen, and one that appears in a very wide range of packaged foods as an ingredient. Drying does not reduce allergenicity.

    Cholesterol oxidation products in stored powder

    Spray-drying exposes milk fat to hot air and a large surface area, and analyses of whole milk powder consistently find cholesterol oxidation products that accumulate further during storage, particularly in warmth and light. Their relevance to human health is not established, but skimmed milk powder does not have this problem and vacuum-packed powder has much less of it.

    Comparing milk powder with fresh milk on a per-100 g basis is comparing a concentrate with a drink. Reconstituted at the label dilution it is nutritionally close to the milk it came from.

    Not appropriate as infant formula

    Milk powder is not infant formula and unmodified cow milk in any form is unsuitable as the main drink under one year. Reconstituting powder more concentrated than the label states is a documented cause of hypernatraemic dehydration in infants.
