About ghee

Butter simmered until the water evaporates and the milk solids brown and are strained out, leaving almost pure butterfat. Removing the water and protein raises the smoke point well above butter and makes it shelf-stable without refrigeration, which is why it developed in hot climates.

Research suggests dairy fat raises LDL cholesterol relative to unsaturated plant oils in controlled feeding trials, and ghee is dairy fat with the water taken out. That is a statement of direction rather than a benefit, and it is among the better-replicated findings in diet and lipid research.

What may be going on: Palmitic and myristic acid, both abundant in butterfat, reduce hepatic LDL receptor activity and slow LDL clearance.

Moderate evidence. Several human studies point the same way, with real caveats.

    Simmering off the water and straining the browned solids is what makes ghee ghee: it removes the components that burn, raising the usable frying temperature well above butter, and removes most of the lactose and casein at the same time.

    More concentrated saturated fat than butter

    Removing the water concentrates everything that remains, so gram for gram ghee supplies more butterfat than butter does. The saturated fat and LDL cholesterol relationship applies to it at least as strongly.

  • Allergy

    Still a dairy product

    Ghee is frequently marketed as suitable in lactose intolerance and milk allergy. Clarification removes most of the lactose and casein but not all of it, and residual milk protein has been measured in commercial ghee. It is a reasonable choice for many people with lactose intolerance and is not a safe choice in cow milk protein allergy.

    Cholesterol oxidation products from prolonged heating

    Traditional ghee is made by heating butterfat for an extended period, and analyses of commercial and home-made ghee have found oxidised cholesterol derivatives formed during that step, at levels that rise with heating time and with reheating. Their relevance to human health is not established, but they are a documented difference from fresh butter.
