About garlic powder

Dehydrated, ground garlic cloves. Drying concentrates everything by weight, so the USDA figures per 100 g look dramatic — but a teaspoon is around three grams and stands in for roughly a clove of fresh garlic. It is a different ingredient from the standardised garlic tablets used in research.

Meta-analyses of randomised trials report modest reductions in systolic blood pressure with garlic preparations, largest in people who start with raised readings. Almost all of those trials used standardised garlic powder tablets at doses around 600 to 1,500 mg a day, taken as medicine; sprinkling garlic powder on food is not the same intervention even though the raw material is similar.

What may be going on: Allicin-derived sulphur compounds appear to increase hydrogen sulphide and nitric oxide signalling in the vessel wall, promoting vasodilation.

Moderate evidence. Several human studies point the same way, with real caveats.

    Garlic is already one of the densest dietary sources of fructans, and drying concentrates them further by weight. Garlic powder is restricted on a low-FODMAP diet and is a frequent hidden trigger in seasoning blends and stock cubes.

  • Interaction

    Antiplatelet activity at supplement doses

    The garlic powder tablets used in trials reduce platelet aggregation, and surgical teams commonly ask patients to stop garlic supplements about a week before a procedure. Anyone on warfarin, clopidogrel or a direct oral anticoagulant should raise regular high-dose use with their clinician.

    Kitchen garlic powder is not a standardised tablet

    Research uses powders standardised to a stated allicin-releasing potential. Supermarket garlic powder carries no such specification, may be blended with anticaking agents or salt, and can have lost most of its enzyme activity in drying.
