About evaporated milk

Milk with roughly 60 per cent of its water removed under vacuum, then canned and heat-sterilised. It is unsweetened, which is what separates it from sweetened condensed milk — a different product with a large amount of added sugar, frequently confused with this one.

    A major regulated allergen. Concentrating and sterilising milk does not remove its proteins, and evaporated milk appears as an ingredient in many sauces, bakes and desserts.

    Concentrated lactose

    Removing water concentrates everything left behind, including the lactose. Per spoonful it carries considerably more than fresh milk, which matters for people with lactose intolerance who use it interchangeably with fresh milk.

    Heat sterilisation changes the milk

    The in-can sterilisation step drives Maillard browning between lactose and milk protein, which gives evaporated milk its cooked flavour and slightly caramel colour, reduces available lysine and destroys part of the heat-sensitive vitamin content. This is why the product is usually fortified.

    Not sweetened condensed milk

    The two sit next to each other on the same shelf in similar cans. Sweetened condensed milk is around half sugar by weight; evaporated milk has none added. Substituting one for the other ruins recipes and misleads about sugar intake.
