Collagen partially hydrolysed to the point where it dissolves in hot water and sets into a gel on cooling. It is the same protein as collagen peptides at a much larger molecular size.
Gelatin is chemically the parent of collagen peptides and has one distinctive piece of evidence behind it: a small crossover study in which 15 g of gelatin with 50 mg of vitamin C, taken an hour before a short bout of skipping, roughly doubled a blood marker of collagen synthesis and increased collagen production in an engineered ligament model. That is a mechanistic result with a specific and tested timing element, which is unusual in this category. It is not a demonstration that tendons get stronger or that injuries resolve faster, and the trial was small.

What may be going on: Glycine, proline and hydroxyproline are the dominant amino acids of collagen, and vitamin C is a required cofactor for the hydroxylases that stabilise the collagen triple helix.
