About sturgeon

An ancient, armoured, slow-maturing fish valued both for its firm, meaty flesh and for its roe. Wild populations collapsed under fishing pressure, and almost all sturgeon now reaching the table is farmed.

Also known as Beluga, Osetra, Sevruga, Lake sturgeon

The evidence in depth

Best supported: Moderate

What each association actually rests on, and the papers behind it. A rating describes the state of the research, not how impressive the food is. How we rate evidence.

May support muscle protein synthesis as a complete protein source, on the general evidence for fish protein quality rather than any study of sturgeon.

Moderate evidence. Several human studies point the same way, with real caveats.

Limited evidence

Has been studied only through the oily fish category, where intake is associated with lower fasting triglycerides. There is no human trial using sturgeon.

Limited evidence. Early human work, or mostly lab and animal research.

Nutrient values are per 100 g of the USDA reference entry named on this page and vary with variety, growing conditions, storage and preparation.

Source record: Fish, sturgeon, mixed species, raw (USDA FoodData Central, FDC ID 173701).

% DV uses the FDA Daily Values for adults and children aged 4 and over. A dash means no Daily Value has been established for that nutrient.

Bioactive compounds

Compounds present in meaningful amounts. Presence is banded rather than quantified, because whole-food levels vary enormously with variety, growing conditions, storage and preparation.

How preparation changes things

Only effects with real support are listed. If a preparation method is missing, it is because nothing dependable is documented — not because it makes no difference.

Nothing dependable is recorded about how preparation changes this food’s nutritional properties. Rather than guess, this section stays empty.

Things to know

Allergies, interactions and intake concerns. Every food gets this section — a reference where everything is uniformly good is not a reference.

  • Worth knowing

    Conservation status and trade controls

All sturgeon species are listed on CITES, and most wild populations are assessed as threatened or critically endangered. Legally traded product is farmed and labelled with a CITES code; unlabelled wild caviar and flesh is a serious enforcement concern rather than a nutritional one.

  • Worth knowing

    Long-lived fish accumulate contaminants

Sturgeon live for decades and feed on the bottom, so wild fish from industrialised river systems can carry mercury and PCBs. Regional advisories exist for wild lake sturgeon in North America.

  • Allergy

    Fish allergy

A finfish, subject to the usual parvalbumin-mediated allergy and cross-reactivity.
