About sprouted wheat

Wheat berries soaked and germinated until a short shoot emerges, then used wet or dried and milled. Germination activates the seed's own enzymes, which changes its starch, protein and phytate before any cooking happens. The USDA reference entry is for the sprouted grain itself.

Has been studied through absorption rather than outcome. Lower phytate after germination improves measured iron and zinc availability in laboratory and short-term absorption studies, but no trial has shown a change in iron status from eating sprouted grain.

    Warm, moist germination conditions favour bacterial growth on any contaminated seed, the same problem that causes outbreaks with bean and seed sprouts. Grain sprouted at home should be rinsed frequently and cooked or baked rather than eaten raw by anyone vulnerable to infection.
