About pacific herring

A small, fast-growing schooling fish with dark, oil-rich flesh, eaten fresh, smoked, salted or pickled across northern Europe and the North Pacific. It sits low in the food chain and is short-lived, which keeps its contaminant load low relative to large predatory fish.

Regular oily fish intake is one of the better-evidenced dietary associations in cardiovascular research, with multiple meta-analyses of cohort studies reporting lower cardiovascular mortality among people who eat fish once or twice a week compared with rarely. This body of work is about oily fish as a category — herring, mackerel, sardine, salmon — rather than about herring specifically, and the trial evidence for purified omega-3 supplements is considerably more mixed than the food-based observational data.

What may be going on: EPA and DHA are incorporated into cell membranes and into eicosanoid and specialised pro-resolving mediator pathways, and lower circulating triglycerides at higher intakes.

Has been studied as a source of DHA and iodine during pregnancy. Advisory bodies generally encourage two portions of fish a week including one oily portion, on the basis that the nutritional contribution outweighs the contaminant load of small, short-lived species. The trial evidence behind DHA in pregnancy comes from supplements rather than from eating herring.

    Thorough cooking inactivates Anisakis larvae. For herring served raw, cured or cold-smoked, freezing at commercial temperatures for the specified holding time is the equivalent control; domestic freezers are often not cold enough to meet it.

    Salting and smoking concentrate sodium and, where nitrite curing is used, can form N-nitroso compounds. Cold-smoked and heavily salted fish are handled as processed foods in dietary guidance rather than as fresh fish.

  • Worth knowing

    Anisakis in raw and lightly cured herring

    The nematode Anisakis simplex is so closely associated with this fish that the infection it causes is commonly called herring worm disease. Traditional lightly salted and marinated preparations do not reliably inactivate the larvae; commercial freezing before raw or cured service is the control step required in the EU and the United States.

  • Too much

    Sodium in cured, smoked and pickled forms

    Salted, smoked and pickled herring carry a sodium load many times that of the fresh fish named in the USDA entry here. Rollmops and matjes are preserved in brine, and the salt is not optional to the method.

  • Allergy

    Fish allergy

    Finfish allergy is usually driven by parvalbumin, which is heat-stable, so cooking does not make the fish safe for someone sensitised to it. Anisakis itself is also a recognised allergen, and reactions have been reported to thoroughly cooked fish that carried dead larvae.

  • Interaction

    Anticoagulant medication

    Very high long-chain omega-3 intakes have measurable effects on platelet function. Ordinary portions of oily fish are not usually considered a problem, but anyone on anticoagulants making a large change to fish or fish-oil intake should raise it with their prescriber.
