About oat bran

The outer layer of the oat groat, separated by milling and containing a far higher concentration of beta-glucan than whole oats do. The USDA reference entry is for the raw bran, which absorbs several times its weight in liquid when cooked.

Oat beta-glucan lowering LDL cholesterol is one of the most consistently reproduced findings in food research, supported by many controlled trials and multiple meta-analyses, and accepted by regulators in both the US and the EU. Oat bran is the concentrated form of the fibre those trials used. Remaining disagreement concerns the size of the effect, not whether it exists.

What may be going on: Viscous beta-glucan traps bile acids in the small intestine and increases their loss in stool, so the liver takes up circulating cholesterol to synthesise replacements.

    Soaking, particularly in slightly acidic liquid, allows native phytase to act and lowers phytate somewhat.

    Gluten cross-contamination

    Oats contain avenin rather than gluten, but ordinary oat bran is milled alongside wheat and barley and routinely carries gluten above the coeliac threshold. Certified gluten-free oat bran is required in coeliac disease, and a small minority of people with coeliac disease react to avenin itself.

    A concentrated fibre load

    Oat bran delivers far more fermentable fibre per spoon than rolled oats. Going from a low-fibre diet to a large daily portion reliably produces gas, bloating and cramping for a week or two; building up slowly avoids most of it.
