About mahi-mahi

A brilliantly coloured, extremely fast-growing surface predator of warm seas, unrelated to dolphins despite the older trade name. It is lean and firm, pale when cooked, and reaches market size within about a year.

    Mahi-mahi is among the fish most often implicated in scombroid histamine poisoning in the United States, despite not being a true scombroid. Histamine forms rapidly in warm, poorly chilled flesh, survives cooking and freezing, and produces flushing, headache, palpitations and rash within minutes to an hour of eating. The episode is often mistaken for a fish allergy.

    Mahi-mahi feeds in reef-influenced tropical waters and has been implicated in occasional ciguatera cases, although far less often than barracuda, large grouper and amberjack. Ciguatoxin is heat-stable and cannot be detected by look, smell or taste.
