About cannellini beans

The large white kidney-shaped bean of central Italian cooking, creamy inside and firm-skinned. The USDA reference entry is for the raw dry seed, which takes up two to three times its weight in water during cooking.

    Undercooked white kidney beans and phytohaemagglutinin

    Cannellini are white kidney beans, the same species as the red kidney bean, and undercooked they cause the same acute vomiting and diarrhoea within hours. Soak the dry beans, discard the soaking water, boil hard for at least ten minutes and only then simmer to tenderness. Slow cookers held below boiling are the documented hazard. Tinned cannellini have already been heat-processed.

    Concentrated alpha-amylase inhibitor from this bean is sold as a carbohydrate blocker. The weight-loss trials are small, short and of poor quality, gastrointestinal side effects are common, and none of it describes what happens when you eat the cooked bean as food.
