About beef tallow

Rendered beef fat, solid at room temperature and roughly half saturated, with stearic and palmitic acid making up most of that fraction. Its stability at high temperature is why it was the standard commercial frying fat before vegetable oils displaced it in the 1980s.

Research suggests LDL cholesterol rises when beef fat replaces unsaturated plant oil in the diet, and falls when the substitution runs the other way. This is a well-replicated direction of effect from controlled feeding trials, and it is a statement about the swap rather than about any single meal.

What may be going on: Palmitic and myristic acid reduce hepatic LDL receptor activity; stearic acid, also abundant in tallow, has much less effect.

Moderate evidence. Several human studies point the same way, with real caveats.

    Highly saturated frying fats form fewer aldehydes and polar compounds than polyunsaturated oils under the same conditions, which is the technical reason tallow was used commercially. It is a trade-off against the fat composition rather than a free advantage.

  • Too much

    Saturated fat, and a revival ahead of its evidence

    Tallow has recently been marketed as a rediscovered healthy fat. It is a saturated animal fat, and the feeding trial literature showing LDL cholesterol falling when such fats are replaced with unsaturated oils applies to it. Part of its saturated fraction is stearic acid, which has a weaker LDL effect, but palmitic acid is also present in quantity.

  • Worth knowing

    Frying stability is real

    Because it is largely saturated, tallow resists oxidation at frying temperature better than polyunsaturated oils and generates fewer aldehydes per hour in the fryer. That is a genuine technical advantage and a separate question from what the fat does once eaten.

  • Too much

    Energy density

    Pure fat. It looks less like an oil than a bottle of oil does, and supplies the same energy per tablespoon.
