    Tetramine in the salivary glands

    Whelks of the genus Neptunea carry tetramethylammonium, or tetramine, in their salivary glands. Eating them without removing the glands causes headache, dizziness, double vision and unsteadiness within about an hour. The compound is heat-stable, so cooking does not help; commercial processing removes the glands, and this is a recognised hazard for people gathering and preparing whelks themselves.
