About soybean oil

The oil sold in most countries as plain vegetable oil, and by volume one of the two most consumed edible oils in the world. It is dominated by omega-6 linoleic acid with a small alpha-linolenic fraction, and essentially all of it is solvent-extracted and refined.

Research suggests LDL cholesterol falls when linoleic-acid-rich oils such as soybean oil replace saturated fat, one of the better-replicated findings in nutrition and the basis for long-standing dietary guidance. This is evidence about a substitution within the diet, not about a property of soybean oil that applies when it is simply added.

What may be going on: Polyunsaturated fatty acids upregulate hepatic LDL receptors and lower circulating LDL relative to saturated fatty acids of the same energy.

Moderate evidence. Several human studies point the same way, with real caveats.

The literature here is genuinely divided. Pooled analyses of trials replacing saturated fat with polyunsaturated oils generally report fewer coronary events, some individual trials from the same era point the other way once their unpublished data were recovered, and the question of whether very high omega-6 intakes carry costs remains open. The honest summary is that substitution appears favourable and the ceiling of that benefit is unknown.

Evidence is limited, and the popular claim that dietary omega-6 raises inflammation is not well supported by human data. Controlled trials increasing linoleic acid intake have generally not shown rises in C-reactive protein or other circulating inflammatory markers, but the trials are short and the marker set is narrow.

    Partial hydrogenation and the trans fat legacy

    For decades soybean oil was partially hydrogenated to make it solid and shelf-stable, which produced industrial trans fatty acids — the clearest case of a dietary fat causing cardiovascular harm, and now banned or restricted in many countries. Modern liquid soybean oil is not that product, but hydrogenated soybean oil still appears in some processed foods.

    Repeated deep frying

    Soybean oil is the backbone of commercial deep frying. Held at frying temperature and reused, polyunsaturated oils accumulate aldehydes, polymers and polar compounds, and the concentration rises with every batch. This is a property of how the oil is used rather than of the oil in the bottle.

  • Allergy

    Soy allergen labelling

    Highly refined soybean oil contains almost no protein and is exempted from allergen labelling in several jurisdictions, and most soy-allergic people tolerate it. Cold-pressed or expeller-pressed soybean oil is a different case and has caused reactions.

  • Too much

    Energy density and ubiquity

    Pure fat, cheap, and present in an enormous share of packaged and restaurant food. Most people consume far more of it than they realise, which is part of why the omega-6 intake debate exists at all.
