About mustard oil

Cold-pressed oil from brown or black mustard seed, sharply pungent because myrosinase acting on seed glucosinolates releases allyl isothiocyanate. It is a staple cooking fat across eastern India, Bangladesh and Nepal, and its regulatory status differs sharply between countries.

    Heating the oil until it smokes, the standard first step in much South Asian cooking, volatilises most of the pungent isothiocyanate and mellows the flavour. It does nothing to the erucic acid content.

    Erucic acid, and the labelling that follows from it

    Traditional mustard oil can contain 30 to 50 per cent erucic acid, a long-chain monounsaturated fatty acid that produced heart muscle lipid accumulation in several animal species. On that basis the US FDA permits mustard oil to be sold only labelled for external use, and the EU and several other regulators cap erucic acid in food fats well below the level traditional mustard oil contains. Human evidence of harm at dietary intakes is thin and contested, but the regulatory position is what it is, and low-erucic mustard cultivars exist for this reason.

    Adulteration with argemone oil

    Mustard oil in South Asia has repeatedly been adulterated with oil from Argemone mexicana seed, causing large outbreaks of epidemic dropsy — a serious illness with oedema, heart failure and glaucoma caused by the alkaloid sanguinarine. Buying from regulated, sealed and tested supply is not a minor point with this oil.

    Irritant when heated

    The allyl isothiocyanate that gives the oil its bite is a potent eye and airway irritant. Indian cooking convention is to heat the oil to smoking before use, which drives off much of the pungency but also means cooking in poorly ventilated kitchens with visibly smoking oil, itself a documented respiratory exposure.
