About lupini beans

A very high-protein, very low-starch Mediterranean pulse traditionally brined and eaten as a snack. The USDA reference entry is for the raw dry seed; bitter varieties are inedible until they have been soaked for days to leach out their alkaloids.

    Repeated soaking in frequently changed water over several days leaches the bitter alkaloids out of the seed. This is the only step that makes bitter lupini safe to eat, and taste is the practical test of whether it has worked.

    Alkaloid poisoning from inadequately debittered lupini

    Bitter lupin varieties contain quinolizidine alkaloids such as lupanine and sparteine. Poisonings occur every year in people who home-prepare lupini without leaching them properly, and symptoms include blurred vision, dry mouth, confusion, rapid heartbeat and, in serious cases, respiratory difficulty. Debittering means days of repeated soaking in changed water, or brining, until no bitterness remains — if the bean still tastes bitter, it is not safe. Commercial sweet lupin varieties are bred low in alkaloids, but jarred products have occasionally been recalled for exceeding limits.

    Lupin allergy and peanut cross-reactivity

    Lupin is a regulated allergen in the EU and UK because it causes reactions including anaphylaxis, and because it cross-reacts with peanut in a meaningful proportion of peanut-allergic people. Lupin flour appears in gluten-free baking and some pasta, where peanut-allergic consumers may not expect it.

    Brined lupini are salty

    The traditional snack is stored in strong brine and can carry a large amount of sodium per serving. Rinsing before eating removes some of it.
