About couscous

Semolina moistened and rolled into tiny pellets, traditionally steamed several times over a stew across North Africa. It is a pasta rather than a grain in the technical sense. The USDA reference entry is for cooked couscous made from refined semolina.

    Couscous is made from durum wheat semolina and is unsafe in coeliac disease and wheat allergy. Its appearance as small grains rather than recognisable pasta makes it easy to miss on a buffet or in a salad.

    Standard couscous is made from refined semolina with the bran and germ removed, so it carries little fibre and few minerals compared with a whole grain. Wholewheat couscous exists but is much less common.
