About cocoa butter

The fat pressed out of roasted cocoa beans, hard and brittle below body temperature and melting sharply just below it — the physical property that makes chocolate behave the way it does. It is roughly a third stearic acid, a third oleic acid and a quarter palmitic acid.

Research suggests cocoa butter raises LDL cholesterol less than its total saturated fat content would predict, because stearic acid behaves differently from the other saturated fatty acids in controlled feeding trials. It still raises LDL relative to unsaturated oils, so this is a comparison between saturated fats rather than a benefit.

What may be going on: Stearic acid is efficiently desaturated to oleic acid in the liver and has little measurable effect on LDL receptor activity, unlike palmitic and myristic acid.

    The cocoa research is about the solids, not the fat

    Trials reporting improved endothelial function and modest blood pressure reductions with cocoa used flavanol-rich cocoa powder or high-solids dark chocolate. White chocolate, which is cocoa butter without the solids, is the usual placebo in those trials. Buying cocoa butter for cocoa flavanols is buying the wrong fraction.

    Around 60 per cent of cocoa butter is saturated, but stearic acid makes up more than half of that and has a markedly weaker LDL-raising effect than palmitic acid in feeding trials. The remaining palmitic fraction does behave conventionally, so cocoa butter is not a neutral fat either.
