About bacon fat

The fat rendered out of bacon during cooking and saved for later use. It is not the same as lard: it comes from cured, salted and usually smoked pork, so it carries salt, curing residues and smoke-derived compounds that plain rendered pork fat does not.

    Bacon is cured with salt, and a measurable amount of it comes out with the fat. Cooking with bacon fat is adding sodium as well as fat, which is easy to overlook when seasoning the dish.

    Processed meat residues and smoke compounds

    Nitrite curing produces nitrosamines under high-heat cooking, and smoking deposits polycyclic aromatic hydrocarbons in the fat. Processed meat intake is classified by IARC as carcinogenic to humans on the basis of colorectal cancer evidence, and reusing the rendered fat carries these components forward into other dishes.

    Saturated fat and energy density

    Compositionally it is close to lard: about 40 per cent saturated, pure fat, and as energy-dense as any oil.

    Already cooked once

    Fat that has been rendered in a hot pan has already begun oxidising, and stored bacon fat continues to do so. Reheating it repeatedly compounds that.
